Caramel Peanut Bars

These bars are similar to the Chocolate Caramel Bars but I like them better as they spread easier, taste better, and do not get so hard. I thought the crust/topping was too wet so I added an extra 1/2 cup of oats.

Chocolate Caramel Bars

You can always tell yourself that these treats are healthy because they have oats in them. I have thought of trying to use melted caramel candies instead of the topping but not sure if they would need any additional ingredients (cream?) to work. They are great a la mode after a zap in the microwave.

Chocolate Oat Squares

These bars are moister than the Chocolate Caramel Bars. I never am able to get the top layer of the oat mixture to spread evenly, so I just dab teaspoonfuls of the batter over the top and cover as much as I can. Just a note to those who may not know about oats (like me!) The quick-cooking variety cooks in 1 minute because the oat has been chopped up into smaller pieces. The old-fashioned oats are whole oats and cook in 5 minutes.

Cocomia Cookies

These are my favorites of Mrs. Fields cookies. The macadamia nuts make them more expensive to make, but they are worth it.

Eggnog Cookies

Another one of Mrs. Fields cookies that I make almost every Christmas when eggnog is readily available. Be sure to use only butter, and bake them in a slow oven.

Toffee Almond Sandies

I absolutely love these cookies; they are great with a cup of hot tea. The recipe makes a big batch but they freeze very nicely. Be sure to buy fresh toffee bits because those little suckers can become a big hard rock real quick!
