Baked Potato Salad

Here's a different kind of potato salad that's worth the extra effort. The next time I make it I think I will add some shredded cheddar cheese and use it as a one dish meal. To make sure the salad does not get soupy, I use Roma tomatoes and I throw away their seeds and pulp.

Calico Corn Salad

This is not one of my favorities but maybe you really like the taste of cumin. I have only made this once and everyone's comment was "It's different." It is a bright, colorful dish and as it has no mayonnaise, it would be a good salad for a picnic.

Nutty Apple Salad

My mom frequently made a version of this salad, and I modify this recipe to mimic hers. I use raisins in place of the grapes, and always include peanuts. Based on your preference, the marshmallows can be omitted. I think this is where my love of apple slices dipped in peanut butter started.

Pineapple Mallow Slaw

This is a nice change from plain old cole slaw. I serve it with ham and sweet potatoes.

Wilted Coleslaw

My grandma loved wilted lettuce which I always thought was rather gross, so I had my doubts about this recipe. But I am so glad I tried it because it has been a big hit with me and others. Please note that the recipe serves only one, so multiply quantities as needed.
